Roasted Chicken Recipe
I always buy organic chicken and I would suggest you do the same.

Ingredients
✔ 1/2 (60 g) cup of unsalted organic butter ✔ 3 garlic cloves, crushed ✔ 4 tablespoons (60 mL) fresh rosemary, chopped ✔ 1 teaspoon sea salt ✔ 1/2 teaspoon black pepper ✔ 1 (2½-pound / 1.25 kg) whole organic chicken, rinsed in cold water ✔ 2 lemongrass stalk, peeled and cut into 4 pieces ✔ 2 red onions, quartered ✔ 6 medium carrots, halved lengthwise and cut into 2-inch pieces |
Method
1. Preheat oven to 200°C (400°F). 2. Place chicken breast side up on a rack in a shallow roasting pan. 3. Place the butter, garlic, rosemary, salt and pepper in a bowl and mix well. 4. Gently loosen the skin off the chicken and push half the butter mixture under the skin. 5. Brush or spoon the other half of the butter mixture over the chicken and tie drumsticks together with kitchen string. (keep some butter mixture to drizzle over the vegetables). 6. Place the lemongrass, onions and carrots around the chicken. 7. Roast about 1 3/4 hours, brushing halfway through, with the pan juices, until a meat thermometer inserted into thickest part of thigh reads 175°F. 8. Let stand 10 minutes before carving. 9. Serve with cooked vegetables. |
