I received my first share of the season, of my CSA (community supported agriculture) which had bok choy, garlic scapes and sugar snap peas, among other veggies. But I tried the snap peas and bok choy with lots of garlic scapes cooked en papillote tonight. I’d never cooked that way. It was great - easy clean up. I didn’t have lemongrass, but just used lemon zest and fresh lemon.
I did find a lot of ingredients at a high end grocery store today and have found other ingredients on line, including burdock root, which I’ve never had before, only dried as an herb. I also found lemongrass plants today. I love lemongrass but just never cooked with it.
...I am digesting, rather devouring, page by page. Most I knew, but a reminder, as I forget so many principles of NB, which you have reminded me of. I was always a meat, starch and veggie meal preparer. In my mind, I knew no double starches, but when I found NB, and learned as much as I possibly could, I forgot some of the principles, that will catapult me thanks to your cookbook.
Dr Wilson, with as much knowledge he has, doesn’t go into the detail you do. I have gone back to the basics and rechecked my diet as I feel, transitioning is hard from modern diet, no matter how good. I always encourage my clients to re-examined their diet after a Hair Analysis, as do I. But your cookbook! Wow! I don’t have that many clients yet, but I will always recommend your cookbook!
I’m excited about adding your gourmet flair to my cooking!!

To say that this is just a cookbook would be an understatement.
More than anything, it is a lifestyle manual…and a very practical one at that.
It is written as a companion to a nutritional balancing program, but stands on its own merits as a roadmap to vibrant health.
It is a blending of the author’s own life experiences in regaining her health.
It is beautifully written and illustrated, but more than that it is a deeply personal history/journey.
As a cookbook, the recipes are delicious and easily prepared....

I really like the layout, the illustrations, charts, spices, meal plans etc.
I like your focus on God. I also did a 12 step recovery. It was a year long, called Celebrate Recovery.
It is my opinion that people can’t fully heal without dealing with the psycho-spiritual. I just watched Dr Klinghardt yesterday state that it is becoming increasingly important to clear the traumas to heal. More so than in the past. He said 50% of our healing must come from this to get out of chronic illness.

I just started the Nutritional Balancing program this year. Seeing the list of the foods recommended for the road back to excellent health was daunting, to say the least. I enjoy cooked vegetables but learning how to prepare the recommended ones seemed like it was going to take a lot of research and time. Then thank goodness I saw someone mention Josephine's book. It is easy to read and has great information on the foods as well.
The recipes are easy and I have already cooked almost a dozen of them. They turn out great. Who knew I would enjoy Brussels sprouts or rutabagas! This book is a godsend !!! And not only to those on the plan but for those who want to eat healthy in general.

Josephine Zanetti has written an excellent cookbook.

Too bad good health can’t be purchased on-line or at Walmart. It’s just not that easy, but if you’re willing to make the effort, nutritional balancing works. Three years on the program and I have been able to rid myself of migraine headaches, bowel misbehaviors (the embarrassing ones), and the wretched brain fog (from heavy metal poisoning), and most recently I notice my lifetime of sugar craving has disappeared! Sugar is now like a flavoring I can choose, like lemon or salt. It no longer calls to me from inside kitchen cabinets and from the freezer chest, distracting me from every task.
Josephine's "Nine Servings of Vegetables" is not only a treasure of information about food, health benefits from food, and how to prepare it to maximize nutrition, the recipes are fabulous. They are simple, with just the right combination or touch of spice to make them interesting. Who would ever think of combining brussels sprouts, squash and cumin?...yummy! I made myself the carrots with lemon-thyme butter and suddenly felt I was eating in a Parisian restaurant.

I got Josephine's lovely book today and I have been reading it like a crazy person. I really do love it!!
It is different than I thought it would be. I had envisioned this book would be mostly vegetarian and I was pleasantly surprised that it covers, well...just about everything.
I love that Josephine has wonderful lists in the book of what to eat and what not to eat. And it is all referenced as to what page the additional recipes for sauces can be found. It is very easy to navigate and I do like Josephine's stories about the different foods, and stories from her family and her up-bringing. It reads very well, and I am super impressed with it.

This is quite possibly one of the better cookbooks I have ever read!
I really enjoyed Josephine's concise explanations on the benefits of nutritional balancing ... Easy to read and she brought a complex subject to life and made it understandable. That in and of itself is less than easy to do!!
I also particularly like all the variety of sauce recipes and how she easily explain preparation of food items that have eluded me for a while - like how to peel shallots.
Additionally, one does not have to be following a nutritional balancing program to reap the benefits of this fantastic cookbook! If one is following nutritional balancing, it provides a much needed service for those just starting out and those who have done this for a while to gain new perspectives and gain some variety in the way nutritional balancing foods are prepared.
I love Josephine's charts and references also.

I really enjoyed Josephine's concise explanations on the benefits of nutritional balancing ... Easy to read and she brought a complex subject to life and made it understandable. That in and of itself is less than easy to do!!
I also particularly like all the variety of sauce recipes and how she easily explain preparation of food items that have eluded me for a while - like how to peel shallots.
Additionally, one does not have to be following a nutritional balancing program to reap the benefits of this fantastic cookbook! If one is following nutritional balancing, it provides a much needed service for those just starting out and those who have done this for a while to gain new perspectives and gain some variety in the way nutritional balancing foods are prepared.
I love Josephine's charts and references also.

I am loving your book!
I could not sleep last night so I got up and read it for another 2 hrs. I especially like how you give all the attributes to each veggie, herb, as well as all other foods. I am now up to p.157 and am looking forward to starting to use some recipes.
I especially like all the recipes you incorporated for special spice mixtures like Ras el Hanout and many others as well as sauces , dressings , etc.. because I think that is where a lot of people who are health conscious in eating organic, tend to fall short by using so many bought dressings, sauces, salsas , etc. that might have unwanted ingredients in them.
Although, we eat many vegetables with our meats, I am planning to cut back on our protein consumption especially when it comes to eggs and meats together. That was a new concept for me, "not to mix several proteins in one meal."
