Josephine grew up, as a Catholic, in an Italian family eating a traditional diet high in carbohydrates and whole grains.

food can be either a poison or a healer.
In fact, in the right hands, food can indeed be medicine.
In her late teens, Josephine began to eliminate foods from her diet that were causing health problems. And, following her reasoning for quality food, she later graduated from the Canadian School of Natural Nutrition, earning a Certificate in Holistic Nutrition.
To grow spiritually and emotionally, Josephine took a leap of faith.
She opened herself to experiences outside her comfort zones.
Part of that process was attending 12-step meetings where, through introspection and stages of development in her faith, she found help healing toxic shame, and strength for stopping victimization patterns while developing herself for deeper knowledge of the truth and a fellowship with God.
Today, one of Josephine's focus is the science of nutritional mineral balancing and the value of hair tissue mineral analysis.
Nutritional-Balancing stresses the importance of detoxifying the body from environmental pollution and heavy metals and thus increasing the body’s adaptive energy levels.
As she began her healing journey, Josephine’s love for cooking led her to a degree in culinary arts at the Dubrulle French Culinary School in Vancouver, Canada.
Combining her knowledge of nutrition with her passion for quality food and cooking, Josephine has now written Nine Servings of Vegetables.
Based on her education and life experience Josephine’s new book emphasizes the importance of cooked vegetables, which alkalize the body and reduce toxins. She integrates delicious, nutritious recipes along with charts of foods to eat and avoid as well as a three-week menu-planning section for slow and fast oxidizers.
This cookbook encourages everyone to eat the variety and quantities of cooked vegetables that support a healthier, more balanced body, mind and spirit which results in greater awareness.
