Asian Green Beans Recipe
The soy sauce and ginger in this dish give it an Asian flavor.

Ingredients
✔ Spring water ✔1½ pounds (750 g) green beans, trimmed and cut diagonally into 2-inch (5 cm) pieces (6 cups/1.5L) ✔2 tablespoons (30 mL) extra-virgin olive oil ✔ 1 shallot, peeled and finely chopped ✔ 2 teaspoons (10 mL) grated ginger, or 1½ teaspoons (7.5 mL) ginger paste (page 220) ✔ Pinch of cayenne ✔2 tablespoons (30 mL) gluten-free soy sauce |
Method
1. Bring a large saucepan of water to a boil over high heat. 2. Add the beans and blanch them for 2 to 3 minutes, drain, and set aside. 3. Preheat a medium-deep skillet over medium-high heat and add the olive oil, shallots, ginger, and cayenne. Sauté for about 2 minutes, and then add the beans, toss a few times, and sauté for a few more minutes. 4. Add the soy sauce and cook for another 2 minutes. 5. Transfer to a bowl and serve warm. |
